Three Talented Chefs, One Exceptional Meal

On Friday, June 7, we were honoured to host an unforgettable evening of culinary wonder as part of the Visa Infinite Dining Series. Together, our very own Executive Chef Solomon Mason and Oliver & Bonacini Corporate Executive Chef John Horne welcomed Chef François-Emmanuel Nicol of Quebec City’s La Tanière for an exquisite one-night-only dinner.

Starting with canapés on our quaint and charming terrasse, delicate bites made their rounds while guests enjoyed freshly shucked oysters, mingling in the early evening sun. Moving into the dining room, attendees were treated to our signature white-glove service as artful creations made their way to each table, course by course.

Dishes like scallops with wild Acadian caviar, butter-poached turbot, venison with wild sarsaparilla sauce and a light-yet-decadent pavlova were paired with fine wines, Laurent-Perrier Champagne, and Rémy Martin 300th anniversary cognac. Highlighting the best of the season, the thoughtful menu made for a remarkable collaboration of three incredible culinary minds and a celebration of inspired French cuisine.
